SERVING SUGGESTIONS; Served with Jalapeño Goose Breasts, (page 20 of Blueberries & Polar Bears), or Honey Garlic Cornish Game Hens (page 153), this dish is a sure winner. It's dynamite combined with Mushroom Goose (page 22) and fresh Cranberry Sauce (page 196). The textures and flavor combinations complement each other perfectly!
TIME-SAVING TIP: You can make this a day or two ahead and refrigerate it. Just increase the oven time by 15 minutes. It even freezes well, so double the recipe and freeze a batch for another day.
COOKING TIP: Cooking time for wild rice varies according to how the rice has been parched (dried).

I was so happy to find this recipe online, thank you. We are snowbirds in AZ and although I thought to copy many of my recipes, I missed this one. I have made it enough and did remember most of it. My husband brought 3 of the cookbooks home with him when he use to be a guest of the hunting lodge. This is one of our favorites.
